This recipe came about due to our desire to have a change of pace from a traditional meat stir-fry.  We wanted to stay away from Potatoes because of their starch content.  Sweet Potatoes became a good substitute.  As always I rarely use exact measurements when cooking.  Everything is by site and taste.  I have tried to document the measurements as accurately as possible.

On to the Recepie: 
Serves: 4
Prep Time: 15-30 min
Cook Time: 15-30 min


1 Large Sweet Potato chopped into cubes
1 Italian Squash chopped into cubes
1 Medium Onion chopped
1 pkg Sliced Mushrooms

Salt & Pepper to Taste


  • Sautee Onion and Mushrooms
  • Add Sweet Potato and small ammount of water to sautee. Cover and allow to steam for 5-10 min until Potatoes are tender.
  • Add Squash and gently toss until warm
  • Salt and Pepper to taste through cooking
